Brunch & Christmas Cookie Tradition:

Every Christmas its tradition for my grandmother, mom and I to bake and decorate Christmas sugar cookies.  It’s a tradition we have been doing for years now and it is one of my favorite things I look forward to during the holidays.  Now that I have my own place I decided it would be fun to bake cookies at my place and have brunch.  I made my favorite quiche recipe and served mimosas; with a choice of OJ, Pome juice or grapefruit juice.  See all details below!  Spinach, Mushroom and Feta Crusted Quiche:

10 (oz) frozen spinach

2 tbs minced garlic

8 (oz) mushrooms

4 eggs

1 cup milk

2 cups shredded mozzarella

2 (oz) feta cheese

4 cups Parmesan

Salt & pepper

For the pie crust:

12 tbs of unsalted butter

3 cups all purpose flour

1 tsp salt

1 tbs sugar

1/3 cup very cold vegetable shortening

8 tbs ice water (about .5 cups )

Dice butter and return to fridge. Place the flour, salt and sugar in a mixing bowl and whisk. Combine the butter and shortening and mix well. Pour ice water in mixing bowl with the other ingredients.  Then hand mix until the dough begins to form. Dump the dough out on a floured surface and roll into a ball. Roll out a little bigger than the pie dish and place over the dish; then use a fork to create ridges on the sides. Pock holes in the bottom of dish and bake for 10 to 15 minutes on 425 degrees. ~ recipe by Ina Garten

Put oven on 350 and thaw your frozen spinach in the microwave. Rinse and chop up your mushrooms then saute them in a skillet with the minced garlic and add salt and pepper.  In a large mixing bowl whisk your eggs until smooth. Then add all of your ingredients and mix; then slowly pour it into your pie dish.  Sprinkle Parmesan cheese over the top and bake for 45 minutes until golden brown. ~ recipe by budget bytes
